Meal Plan Link Up

I’ve had to put our meal planning on hold the last few weeks. We have barely survived dinner time by winging it (freezer meals or soup and sandwiches or Chick-fil-a). Life has been happening (nothing bad!) and I’ve not been able to create or even post our weekly meal plan.

So, I’m hoping you can share some links to your favorite recipes- allergy friendly or at least easily adaptable. For instance, I can easily swap out almond milk for cow’s milk. Or I can adapt a recipe that includes eggs- up to two eggs is always the recommendation. If the recipe has more than two eggs, I likely cannot get a good adaptation.

    1 or 2 bags chicken tenderloins,4 cups flour, 2 cups breadcrumbs, 4 packets of Italian dressing (dry kind) 3/4 cup of parmesan cheese (sprinkle cheese),season all- as desired, oil (for frying)
    Rinse tenderloins and put in bowl and cover with milk. In second bowl mix flour, breadcrumbs, sprinkle cheese, Italian seasoning and season all.
    Heat oil enough to cover bottom of skillet half inch to and inch. Heat on medium high. When oil is ready take a tenderloin from milk, roll it in seasoning mixture (do for each tenderloin) and place in heated oil on skillet. Fry on each side till golden brown and white in the center.
    Place chicken on paper towel to drain grease…..so yummy 🙂

  2. Ok took me a little bit and I have no idea where this recipe originated from but we cal it “chicken supreme”

    frozen chicken tenderloins
    1 can cream of chicken soup ( Ellie, I thought you had a dairy free kind?)
    stuffing mix ( vegan mix?)
    seasonings I like adobo seasoning and a little garlic salt
    Lots of cheese!
    oven 350. Spray 9×13 pan. place frozen chicken in pan. Sprinkle with fav seasonings. I strain off the seasoning in my stuffing mix and then sprinkle mix on top of chicken! in a separate bowl mix soup and milk or half n half (if your feeling decadent). cover chicken and stuffing
    mixture with oodles of cheese. pour soup mixture over all! Pop in 350 degree oven for about an hour and ten minutes. Easy peasy lemon squeezy. – Briana Hatcher
