Looking Well to the Ways of My Household

I’m sitting here enjoying a nice cup of coffee (with Silk french vanilla soy coffee creamer!) and making a list of things I’d like to accomplish this week.  My list is a little ambitious, but I think I can accomplish most of it.  I thought I’d share it with you and share the links to all of these delicious recipes.

Did you notice most of my to do list revolves around food?  Safe food?  Because us food allergy parents must always be prepared!  Always.  We don’t have the luxury of last minute take out.  I wish I did!  Can a vegan restaurant please come to my town???  I promise we’ll eat there at least two times a week.  🙂

Homemade “Cheesy” Crackers
(I sub Daiya cheddar shreds for the cheese. I’m thinking about also adding a tablespoon or so of nutritional yeast this time to make them a bit cheesier tasting.)

This week I added to my list “find meatless meals.” We are not vegetarian or vegan but the Huzz and I have decided to have at least one meal a week meat free. I now need to find meatless meals! I know beans are a great source of protein, but because the Huzz has intestinal issues, he can’t really eat whole beans. Which is why we love these refried beans I made recently!

Last Minute Super Bowl Recipe Ideas

I know this is cutting it close to game time but last night I finally decided what we are going to serve at our Super Bowl party tonight.

Salami and Cream Cheese Roll Up
(I used Daiya “cream cheese” and Hormel Natural Choice Salami.)

Ham & Pineapple Pizza
Today I’m using a Pillsbury crust. I’m adding Daiya mozzarella shreds today though. Usually I make it cheese less.

Chicken Wings
I’m using the directions on the bag of frozen chicken wings and baking them for an hour. I’m going to toss the wings in some safe melted margarine & Frank’s Red Hot Sauce.

Homemade Popcorn
I’m seasoning some with olive oil and salt. Some of the popcorn will be seasoned with this new recipe: “cheesy ranch” popcorn. The only changes I’ll make are sub nutritional yeast flakes for the parmesan cheese.

Chocolate Chip Cookies

Super Bowl Strawberries:
This was inspired by a photo that was shared on Facebook from Kids with Foods Allergies Foundation. I melted some Enjoy Life chocolate chips with a dollop of shortening. Dip strawberries & place on parchment paper. Let the chocolate harden. Mix some powdered sugar with a little bit of water. I didn’t write out any measurements. Play with the thickness of the icing until it stays on the strawberry. You don’t want it to run off of the strawberry. Pipe football design onto your strawberry.

Quick Queso Dip

We are also going to have chips and salsa and some Oreos.

Maybe next time I’ll be on the ball and post helpful hints earlier. 🙂

Delicious Homemade Chocolate Chip Cookies: Dairy Free and Egg Free

These cookies are AMAZING! I used Silk Almond Vanilla Milk, sweetened. For the margarine I used Fleischmann’s Unsalted Margarine or Earth Balance vegan buttery sticks and Enjoy Life semi-sweet chocolate chips.

Warning- these are highly addictive.

Update:  I now add in Enjoy Life chocolate chunks along with the chocolate chips.  Mmmm!  Even better!
